Thai Larb Salad

Ingredients:

1 lb. Ground Pork, Beef, Chicken or Baked Tofu
6-8 Limes
1 Shallot
Fresh Cilantro
Fresh Min
Red Leaf or Bibb Lettuce
1/4 White Long Grain or Calrose Rice
1 Tablespoon (or more!) Chili Flakes
4-6 Tablespoons Fish Sauce

1. Juice all limes and set aside.
2. On stovetop, heat a pan over medium heat. Place dry rice in pan (do not use oil) and swirl and toast until brown. Approximately 5-7 minutes. Remove rice from pan and break into pieces with mortar and pestle or clean coffee grinder.
3. Slice shallot length wise.
4. Chop several sprigs of fresh mint and cilantro.
5. Brown meat of your choice in a pan and drain fat.
6. Transfer meat to a mixing bowl.
7. Add about 2/3 of lime juice, 1/2 of the toasted rice, chopped shallots, mint, cilantro, 1 tablespoon chili flakes, and 4-6 tablespoons of fish sauce .. stir well!
8. Add additional lime, fish sauce, and chili flakes if needed.
9. Garnish with additional toasted rice, cilantro, and mint.
10. Serve on red leaf or Bibb lettuce, roll in hand and enjoy!
