If you happened to watch my Mushroompalooza video, you saw we cooked up a feast on Friday night! There were tons of leftovers including some delicious fire roasted squash and tofu.
The next morning I whipped together a vegetarian breakfast “hash” with the squash and tofu and just added some spices and freshly chopped sweet onion and garlic.
